 Broth:
In large stock pot, heat both oils and then add carrots, onions, and celery and sauté until soft, about 8 minutes. Add seasonings and pour in stock. Bring to a boil, reduce to a simmer, and drop wontons in one at a time. Maintain sim- mer and cook wontons for about 10-15 minutes, until they float. Serve soup topped with chopped green onions.

CHICKEN WONTON SOUP
Happy New Year! Now is the time we rethink our diets after all the holiday parties. This soup is warm and satisfy- ing yet it feels lighter. Ground chick-
en works best but you can substitute ground turkey or pork too.
Ingredients:
Filling:
1 pound ground chicken
1 teaspoon garlic powder
1⁄2 teaspoon ginger
1⁄2 teaspoon five-spice powder
2 tablespoons grated onion with juices 1 tablespoon sesame oil
1 tablespoon soy sauce
1⁄4 cup dry Italian bread crumbs
Salt and pepper to taste
20 wonton wrappers
Water to seal edges
2 tablespoons sesame oil 2 tablespoons olive oil
3 carrots, chopped
1⁄2 onion, chopped

Calhoun County Public Health reported a lack of vaccinations (Under 50% in Calhoun County) and a num- ber of breakthrough cases is causing concern. Most breakthrough cases have been in adults over 60 and those who are immunocompromised. The Health Dept. is still running clinics. The schedule can be found on their website at www.calhouncountymi.gov. Boosters are widely available from pharmacies and doctors’ offices.

Oaklawn Hospital has been con- ducting COVID testing at the Albion Express Care site everyday from 11am-8pm when staff is available.
SafePlace said their facilities are very full and busy. Court systems are backed up. They are unable to test
