 Cooking
   LEMONADE CAKE
FOR TWO
Joanna Stelloh Phelps, Special to Senior Times Instructions:
Summertime means lots of picnics and barbeques, which usually require you to 'bring a dish to pass.' What would be more refreshing than a lem- ony flavored cake? This cake can be made in either a 9" x 13" cake pan, or a Bundt pan, but make sure you remove the cake from the Bundt pad before poking the holes and pouring the lem- onade mixture over the top.
Cake:
One 15.25-ounce box lemon cake mix 1 cup water
1⁄2 cup vegetable oil
3 eggs
Preheat oven to 350 degrees. Spray 9-inch x 13-inch cake pan or 12-cup Bundt pan with baking spray; set aside.
In large bowl, mix cake mix, water, oil, and eggs with hand mixer according to package. Pour into prepared pan and bake until toothpick inserted into center comes out clean. (9 x 13 pan for 28 to 33 minutes or Bundt pan for 45-55 min- utes.) Remove from oven. For 9 x 13 pan, leave cake in pan and poke holes all over with a fork. For Bundt pan,
let cool 10 minutes in pan and remove cake, then poke holes all over the top.
In medium bowl, whisk 1 cup lem- onade concentrate and 1 cup powdered sugar together and pour evenly over top of warm cake. Let soak until cake comes to room temperature, then cover and refrigerate until chilled, about one hour.
For frosting, beat cream cheese with butter until fluffy. Gradually add 3 cups powdered sugar, lemonade concentrate, and pinch of salt and beat just until combined and smooth. Taste and add more powdered sugar if desired. Spread frosting on cooled cake. Each cake should yield about 15 or 16 servings.
