SHIRLEY’S PERFECT TURKEY STUFFING

The holiday season is my favorite time of year. It is a time when we all change our focus just a little bit. We focus on others; we focus on what makes them special. We focus on celebrations and traditions, many of which center on food.

There is nothing like the smell of a tur- key roasting in the oven, filling the house with the rich aroma. As a young child
I watched my parents work in tandem creating a feast for family to enjoy. The cherished time that was set aside to begin the preparations all began with the stuffing days before. While some may look at is a task, I looked at stuffing preparation as the best part of the success of a great turkey dinner. Days before, we began ripping the bread to pieces and letting it sit. Regular turning was required and filled the kitchen with the smell of bread.
Chop and set in the fridge overnight: 1-1/2 cups chopped onions
3 cups chopped celery
The night before the turkey was cleaned and made ready for the stuffing. Next, came making the stuffing from scratch, and finally stuffing the turkey for cooking overnight.

Melt 2 cups butter in large skillet. Add mixed spices and stir. Pour onions and cel- ery in the mix and cook until tender.

Recipe for 20# turkey. Recipe is easily halved for a smaller turkey.
Remove stuffing immediately after cooking turkey and serve with dinner.

Shirley's Perfect Turkey Stuffing
Stuff warm mixture in turkey. If not enough room in the chest cavity stuff the neck area as well. Pin closed. Cook turkey.
