 THAT CAKE WE LOVED

  As the story goes my grandmother would make this wonderful coffee cake for special occasions usually around the holidays. This cake was usually served during the breakfast hours of Thanksgiving and Christmas. It was also seen at many church ladies’ prayer breakfasts.

 Many great conversations have been enjoyed while partaking of the cake and coffee. Stories of family outings and remem- brance of great adventures and the desire for new beginnings for the new year. One of the favorite stories of how grandmothers’ coffee cake took first prize at the church bake off and how she was runner up at the county fair always topped the conversation. Grandpa would say, “She should have won that first- place prize if it wasn’t for that Mrs. Timber and her rhubarb pie.” Grandma would say, “That pie would be nothing special if it wasn’t for my canned rhubarb, I gave her.”

The tradition was handed down to my mother who in return would make the coffee cake for holidays. I remember as a child the smell of the coffee cake baking and the antic- ipation of the warm cake that followed. We would enjoy the cake with freshly homemade hot cocoa (off the back of the cocoa can). We would sit and talk about family and the many things we were grateful for that year and the excitement the new year had to bring. The coffee cake did make an appearance at a few church functions over the years with many wanting the recipe. She would gladly give the recipe with a few simple instructions:

The first thing out of my boy’s mouth, “Grandma when are we going to have that wonderful coffee cake?” She would always say, “Soon, and who wants to help make the cake?” The three of them would make the cake, tell stories, and laugh together. One of their favorite stories was of how they made a huge mess the one year and turned Jack, our then black wie-
ner dog, white with flour and how he made white tracks throughout the house. We would enjoy that coffee cake and the homemade hot cocoa (off the back of the cocoa can) over the years while she has visited and the many memories that followed.
3 cups flour
1 1⁄2 cups sugar
3 teaspoons baking powder
1 teaspoon salt
1 teaspoon lemon extract
1 cup shortening
1 cup milk
3 unbeaten eggs

My boys have grown and still talk about that coffee cake. They ask for the cake when having friends over or while home visit-
ing from college. I gladly make it for them whenever they ask especially during our family time around the holidays. We tell of stories of year’s past and speak of the new adventures the new year will bring. We still tell the story of how our poor dog Jack got floured that one Christmas break, and how my wife was finding dog footprints every- where in the house. Sadly, my mom has not
